Wheat bran is the fiber-rich outer layer of the wheat berry, but it's much more than a good source of fiber. Enjoy its nutty flavor in baked goods like muffins, quick breads, cookies and pancakes, or sprinkle on casseroles and cobblers before baking.

Toasting wheat bran gives it an especially nutty flavor and crunchy texture. Set oven to 350ºF. Pour wheat bran in a thin layer on a baking sheet and bake, about 5-10 minutes, stirring frequently, until lightly browned. Wheat bran browns quickly; keep a close watch.
